Spanish Flan

At out Mexican Christmas Eve Feast we served Flan for dessert.  Its my youngest sister’s favorite dessert and it just so happened to fit the Mexican food criteria!  It is a nice change from the typical desserts we eat.  Flan is a sweet custard dessert.  If you haven’t given it a try, you really need to!  It is SO easy to make and tastes great!

SPANISH FLAN

1 cup sugar
3 large eggs
1 (14 oz) can sweetened condensed milk
1 (12 oz) can evaporated milk
1 tsp vanilla

Preheat oven to 350 F
In a medium saucepan over medium-low heat, melt sugar until liquefied and golden in color.  Carefully pour hot syrup into a 9 inch round glass baking dish, turning the dish to evenly coat the bottom and sides.  Set aside.
In a large bowl, beat eggs.  Beat in condensed milk, evaporated milk and vanilla until smooth.  Pour egg mixture into baking dish and cover with aluminium foil.
Bake at 350 for 60 minutes.  Let cool completely.
To serve, carefully invert on serving plate with edges when completely cool.

    My husband loves flan & I've never had it. Your recipe looks easy & yummy so I thought I'd try it out. Its in the oven now & I can't wait to see how it comes out! I did have problems heating the sugar. I added water so it wouldn't crystalize. Do you have any tips on heating the sugar? Thank you!
