Mud Hen Bars

My sister is getting married in a month :) and I am throwing a shower for her at the end of this month.  I have been trying out different treat options to serve at the shower and was so glad when I stumbled across this recipe! These little bars are melt-in-your-mouth DELICIOUS!  Oh. my. gosh!  It is their unique topping, in my opinion, that makes these so wonderful!  You HAVE TO try these out!  They really are SO good!

 

MUD HEN BARS
recipe from: Sunday Baker

1/2 c. butter, room temp
1 c. granulated sugar
3 eggs
1-1/2 c. all-purpose flour
1 t. baking powder
1/4 t. salt
1 c. nuts chopped
1/2 c. semi-sweet chocolate chips
1 c. marshmallows
1 c. brown sugar

 

Beat together sugar and butter until creamy. Beat in 1 whole egg and 2 egg yolks (put aside the whites for later). In a seperate bowl, mix together the flour, salt and baking powder. Add to the butter mixture and mix well. Spread into 9×13″ pan. Sprinkle with marshmallows, nuts and chocolate chips.

Beat egg whites until stiff peaks form. Fold in the brown sugar. Spread over the mixture in pan. Bake in a preheated 350 degree oven for about 30 minutes or until bars are a deep golden brown and the crust is cooked through. Cool in pan and cut.

*NOTE* I excluded the nuts because the majority of my family are not nut people
