Rocky Road Fudge
This recipe was so easy and so good! It had the perfect texture of soft, chewy and crunch! You are going to love this fudge!
ROCKY ROAD FUDGE
recipe from: Christine’s Cuisine
1 bag (12 oz.) bittersweet chocolate chips
1 can (14 oz.) sweetened condensed milk
2 Tbsp. unsalted butter
pinch salt
1 1/2 cups mini marshmallows
1 cup chopped walnuts, pecans or peanuts
1/2 cup semisweet chocolate chips
Combine the bittersweet chocolate chips, sweetened condensed milk, butter and salt in a glass bowl and melt in the microwave, stirring at 30 second intervals.
Once chocolate mixture is completely melted, immediately stir in marshmallows, nuts and additional chips.
Pour mixture into a greased 8 x 8 dish and press down to spread out evenly.
Cover and refrigerate at least one to two hours, until completely firm.
Cut fudge into squares and store in refrigerator until ready to serve.

I don't like nuts, so this isn't the fudge for me, but that Candy Cane Fudge you featured sure is! I made it last night for a friend and for my office, and let's just say there is much less to take to work than I intended...

Just made this yesterday, tastes fantastic, super rich! The only thing I would suggest is lining the pan with plastic wrap or foil, Im having a hard time getting it out of the pan. Trying a wash cloth with very hot water to put over the upside down pan to see if that might help loosen it a little. Thanks for the recipe!

I would suggest for next te that you either spray the buttery floored cooking spray in the bottom and sides of the pan or else rub the sides an bottom of the pan with butter. I think this will alieviate your problem with the fudge sticking in the pan. I think this would be easier and just as affective as lining the pan with plastic wrap or foil. :-)
