Crockpot Chicken Tortilla Soup

 2012 is tomorrow! WOW! This year has been a good one to my family.  I am so excited to see what next year has in store for us :) I hope you all have a fun and safe new years tonight, filled with great food and company!

To me, there is nothing more comforting on a cold winter day than a nice warm bowl of soup.  I was browsing the internet last week for recipes for this week’s menu.  I stumbled upon this recipe and immediately jotted it down on my grocery list.  The good thing about this recipe, is most of us have all the ingredients on hand!  My hubby raved about how delicious this recipe was and we both agree that this will be cycled into our dinner rotation!The other great thing about this recipe is that it literally took 10 minutes to throw together.  Open all the cans, dump them in the crock pot, stir in the spices, stick in the raw chicken breasts and let the crock pot do its magic.  Seriously.  How easy is that?!

 

CROCKPOT CHICKEN TORTILLA SOUP

2 chicken boneless skinless chicken breasts
2 cans Ro-Tel (I like the lime & cilantro, but the regular is fine)
1 can black beans, rinsed and drained
1 can kidney beans, rinsed and drained
1 can corn
1 onion, chopped
2 cans low-sodium chicken broth
1-2 cups of water
1 Tbsp garlic powder*
1 Tbsp chile powder*
1 Tbsp ground cumin*
1 Tbsp dried cilantro*
tortilla chips
sour cream
shredded cheddar or Mexican blend cheese

Instead of these spices, you could include a packet of Taco seasoning if you prefer.*

Put chopped onion, cans of beans, rotel, corn, chicken broth, water, and spices in CrockPot and stir to mix. Put chicken breasts on top of mixture and make sure they’re at least partly submerged in liquid. Cook on high 6-7 hours or low 8-9 hours. Before serving remove the chicken breasts from soup and shred, if needed, (sometimes they’ll just fall apart on their own, but sometimes they need some help). Return chicken to CrockPot, stir to combine.

To serve put a few tortilla chips in the bottom of a bowl, ladle soup over tortilla chips, top with shredded cheddar cheese, and a dollop of sour cream, serve with more chips if you like.

    I made this last night, and it was very, very good. I had a box of chicken broth, so used the whole container and skipped the water. Delicious and so easy. This will become part of our regular dinner rotation.

    Elizabeth I used just a box of the Swanson (or can use whatever brand) chicken broth and it turned out well..skip the water though is my tip! I tried it with water last time and was actually not flavorful enough...probably because I used the whole box of chicken broth! My husband loved it and is asking for it again already!

    I made this for my family this weekend. Added a little lite sour cream and a few thin tortilla strips too. So so yummy. I doubled the recipe and we have been eating on it for the last two days. Heck, it was my breakfast this morning!!! Yummy!! And yes, it freezes and rewarms wonderfully!

    Made tonight...will definately make again. Doubled the black beans/ no kidney beans, and did not add any water. Have made many versions of this soup, and I always feel they do not need any water. Topped w/ avocado, shredded cheddar, sour cream, and tortilla strips.

    I made the soup and substituted a can of white meat chicken breast. It was absolutely delicious. Had it with sour cream, cheddar cheese and tortilla chips. Will make this often. Husband loved it.

    Made this tonight and it was delish. My crockpot only fits 2 quarts so I didn't have room for the extra water, but it honestly didn't need it. I think it was more flavorful that way. Thanks so much!

    Everyone is still patting my back with this meal...although I keep insisting that it was almost as simple as fixing a bowl of cereal. I mean, my family practically gave me a standing ovation. Like others have commented, I did not add the extra water and used a box of broth instead. Divine.

    I made this today and it was absolutely delicious! Very simple to put together. I chose to pre-cook my beans instead of using canned, and also replaced canned corn with 1.5cups of frozen. Turned out wonderfully! Thank you for sharing ;o)

    Made this soup tonight; it was everything a slow cooker meal should be (easy, no-fuss, tasty, and comforting)! If you're a spicy food fanatic like me I suggest adding 1 tsp of red pepper flakes and 1 tsp of ground red pepper for some heat. I also wished I had lime wedges for serving-- next time!

      I am wondering what type of Ro-Tel you use and what size. .diced tomatoes? tomato sauce? Our store sells a big variety of Ro-Tel brand products.

    This looks so good and i would really like to make it. But first i would like to know if you need to cook the chicken first or can you just put it in the crock pot frozen or thawed?? I would really appreciate if someone can let me know! : )

      You just put it in raw. Frozen or thawed would work, but if you use frozen you may need to adjust the cooking time a little bit. Let me know if you have any more questions :)

    This was delish! I added a bunch of fresh cilantro, some minced garlic, garbonzo beans and extra black beans just to make it a little heartier:). Also before serving I added 2 squeezed limes just by I love the lime flavor in Mexican soups. Thanks for a great recipe!!!

    Just delicious! I finally got around to making Chicken Tortilla Soup using my new crockpot and this was a great first meal! I'm a college student, so I simplified by using the taco seasoning and also Cream of Chicken in place of broth. I also cooked my own tortilla strips. As it was cooking I constantly had to do taste tests and couldn't stop myself with one bowl when it was finished. It was nice to just dump in a bunch of cans and let cook until dinner.     Made this soup and it is delis!!!! Used the regular rotel tomato's, not the lime. Then I am not a hugh garlic fan so I used 1/2 teaspoon of garlic not the 1 tablespoon.. I will be making this over and over again. Also this is low cal for a good tasting soup!
