Slow Cooker Carnitas

Carnitas remind me of my dad.  I am pretty sure its his favorite dinner.  I made this earlier in the week and my whole family LOVED it.  The flavor was absolutely wonderful!  This made a lot so what we didn’t eat, we just threw in the freezer for a yummy meal at a later date! 

SLOW COOKER CARNITAS
recipe from: Allrecipes.com

1 tsp. salt
1 tsp. garlic powder
1 tsp. ground cumin
1/2 tsp. crumbled dried oregano
1/2 tsp. ground coriander
1/4 tsp. ground cinnamon
1 (4 lb.) boneless pork shoulder roast
2 bay leaves
2 cups chicken broth

Mix together salt, garlic powder, cumin, oregano, coriander and cinnamon in a bowl.  Coat pork with the spice mixture.  Place the bay leaves in the bottom of a slow cooker and place the pork on top.  Pour the chicken broth around the sides of the pork, being careful not to rinse off the spice mixture.
Cover and cook on Low until the pork shreds easily with a fork; about 10 hours.  Turn the meat after it has cooked 5 hours.  When the pork is tender, remove from slow cooker and shred with two forks.  Use cooking liquid as needed to moisten meat.

    So I just made these for dinner tonight after seeing them on Pinterest. I have never cooked pork shoulder before or had carnitas but I like to live dangerously so I gave it a whirl ;-) oh. My. Goodness. So stinkin' amazing! So moist and flavorful. I can't wait for lunch tomorrow for the leftovers.     I did not have a pork roast..so I am trying this out with 2lbs of chicken breasts instead..I used a little less spice..since I didn't have 4lbs of meat...hoping it turns out yummy..smells great already after only 2 hours of cooking.

    These were great, a fantastic way to switch up my dinner menu. BE FOREWARNED LEFTOVERS ARE NOT THE BEST THE NEXT DAY! The pineapple turned bitter, and we found it to be a fresh food only menu item.
