Slow Cooker Thai Pork with Peanut Sauce

I have been getting requests for more crock pot recipes and I am more than happy to oblige! As you all know, I love my crock pot.  Definitely my favorite way to cook!  While on Pinterest I came across this recipe and decided to give it a go and I am so glad I did!  It was delicious!

SLOW COOKER THAI PORK WITH PEANUT SAUCE
recipe from: Prep Ahead and Dine In

2 pounds boneless pork loin, fat trimmed and cut into 4 pieces
2 red bell peppers, cut into strips
1/2 cup prepared Teriyaki sauce
2 Tbsp. rice vinegar
1 tsp. red pepper flakes
3 cloves garlic
2-3 Tbsp. creamy peanut butter

Optional garnishes:
Chopped green onions (about 1/2 cup)
roasted chop peanuts (about 1/4 cup)
1 lime sliced into wedges

Spray slow cooker with cooking spray. Place all ingredients except for peanut butter and garnishes in the slow cooker.
Cook on low for 8-9 hours. Before serving, remove pork and cut up.  Mix peanut butter with sauce in slow cooker until peanut butter dissolves.  Toss pork back in slow cooker and coat with sauce.  
Serve over rice with garnishes!

    This was really good, just made it! I definitely will double or maybe triple the sauce next time! I like saucy rice :-)great flavor though! It only took about 5-6 hours in my crock pot.

    This didn't work at all for me. By barely 8 hours on low, the pork was shrivelled and the sauce was bubbled and caked to the bottom - certainly not any liquid left! I triple checked and then got my fiancée to read the recipe, and we still can't figure out where anything deviated or what went wrong. Help?! Any ideas?! It looked soooooo good. We even used less pork (~1.3lbs) but kept the amount of liquid the same to have extra sauce!
