Monkey Muffins
My daughter turned two last Tuesday…I can’t even believe it! Time really does fly when you have kids! Avrie (my little girl) currently has two favorite loves in life.
1. Buzz Lightyear
2. “Moe” her sock monkey
We decided to theme her party around “Moe” and she LOVED it! We kicked off the day by going to the zoo and came home for some “monkey” themed foods. The next few days will be the recipes from this fun party!The first “Monkey” recipe is adapted from one I bookmarked weeks ago from the lovely Pioneer Woman! It looked extremely easy and fast to throw together for a birthday treat! This treat was not only easy, but completely DELICIOUS! We loved every bite and there was not one left at the end of the party!

Monkey Muffins
Ingredients
- 2 cans refrigerated Grands Homestyle Biscuits
- 3/4 cup butter
- 12 teaspoons sugar divided
- 3 teaspoons cinnamon divided
- 1 can sweetened condensed milk
Instructions
- Preheat oven to 375 degrees.
- Add 1/3 tablespoon (I cut each tablespoon into thirds but it is also the equivalent of 1 teaspoon) of butter to the bottom of each muffin cup.
- Sprinkle 1 teaspoon sugar and 1/4 teaspoon cinnamon to each muffin cup (no need to mix them together just dump measured amount in separately for even quicker prep time!)
- Cut biscuit dough into quarters. Roll each dough quarter into a ball and place three balls into each muffin tin cup containing butter, sugar, and cinnamon.
- Top muffins with another 1/3 teaspoon butter. Sprinkle about 1/3 teaspoon sugar and a dash of cinnamon.
- Bake for 12-15 minutes, or until golden and bubbly.
- Remove from oven and immediately drizzle sweetened condensed milk over the top of each one.
- Allow rolls to cool completely before serving (if you can...I found it pretty hard! They look, smell and taste AMAZING!)

I made something like this in high school... a very long time ago, we'll just say that... The only major difference is we used a sourcream/powdered sugar/vanilla icing. Yummy stuff, no matter which whay you make it, though!

Monkey bread is always cut into sections. That way you pick it with your fingers and eat it. Monkeys always pick at thing to eat it.

Mine didn't turn out as ooey, gooey good as the picture looks. The granulated sugar didn't melt completely which was the main problem. And I used the small size can of Pillsbury Buttermilk biscuits so maybe I should have shortened the cooking time? I really like the idea of using the sweetened condensed milk as a quick and easy glaze though! Overall, still good!

made these yesterday they're delicious! but i did make one change that i found to be a huge difference for the better. i made one batch the way it says to but i felt they weren't Cinnamon-y enough so i rolled the balls in the cinnamon sugar and coated them all, that way the entire thing had that cinnamon sugar flavor and it wasn't over bearing at all :). just my advice for anyone that thinks they need a little more sweetness to it.

These look amazing but, being from the UK, what would you suggest as a suitable alternative for the biscuit dough? I realise you said bread dough, but regular bread dough? Brioche? Maybe there's a premade option for us UK folk too...?

I made the monkey muffins the other day. I used the Grands Homestyle biscuits because I had them on hand. I followed the recipe exactly (I usually do the first time around). I found that using the biscuits made these salty along with using salted butter (the recipe didn't indicate to NOT use unsalted butter). I think they would have been less salty with one or the other? Not sure. Also, the sugar, butter and cinnamon combination at the bottom of the cups pretty much stayed there--some of it baked into the bottom of the biscuits, but not much. I felt it was a waste! I was pretty disappointed about that! I think that this recipe could be better if bread dough was used or something similar. I would also put a lot more of the cinnamon/sugar sprinkle on top!!! I really think this recipe has potential, it just has to be tweaked a bit!

What other substitute can be used? Biscuits dough? Do you mean any biscuit dough mixture i.e chocolate cookies batter?

I'm sorry this is good however i would definitely recommend melting the cinnamon sugar and butter together before adding to the tin.

Made these this morning and they were delicious and easy. My oven finished them in 12 minutes (so I guess you have to know your oven). My husband loved them also.
