Peanut Butter S’more Cookies

Okay, the fad continues.

My husband’s brother is in town this week, visiting from across country.

Yesterday was the only day we could drive down to their parents to visit with them.  We had a fabulous BBQ (an AMAZING recipe to come soon) and we needed a great dessert. I chimed in with, “Well I know this one cookie…”And the rest is history. 

My hubby calls them Peanut Butter S’mores, even though there is no graham cracker.  Oh well, its catchy and easier to say, so I am going to stick with the name :)

Chocolate + Peanut Butter + Marshmallow = BLISS! MMMmmM!

PEANUT BUTTER S’MORES

1 1/2 sticks (or 3/4 cup) butter
3/4 cup brown sugar
1/4 cup sugar1 (3.4 oz) package instant chocolate pudding
2 eggs
1 tsp vanilla
1 tsp baking soda
2-1/4 cups flour
1/2 tsp salt
10 oz bag Reese’s Peanut Butter Chips
1-1/2 cup mini marshmallows

Preheat oven to 350 F.
Stir together flour, salt and baking soda and set aside.
In a large bowl, cream butter and sugars together.
Add in pudding package and beat until well blended.
Add eggs and vanilla and mix until smooth.
Add flour mixture slowly until well incorporated.
Add Reese’s Peanut Butter Chips and mini marshmallows and mix in.
Roll into 1″ balls and place on greased baking sheet.
Bake at 350 F for 10-12 minutes.

    I finally made these yesterday after having the ingredients sitting around for a week... sadly, I somehow screwed them up. Instead of them baking out and expanding on the pan like they should, the balls just rose a little. They taste a little weird too. I must have done something wrong... I think I'll try again after another trip to the store...

    I have made these twice now. They are SO delicious! I couldn't find Reeses chips so I just crushed up mini reeses (froze them first) and it worked great. Definitely a keeper, thanks!

    I made these yesterday and they were a total bomb :( I followed the recipe exactly and they tasted like flour and the marshmallows melted all over the place. Also it seemed like 10 oz of peanut butter chips was too much. After mixing the dough (before putting in the chips and marshmallows) it was SO THICK. I could hardly stir it and and batter just kept getting stuck in the beaters. Also the inside of the cookies never baked. The outside got firm but it was still dough inside... I even kept them in the oven 20 minutes and STILL no luck. I ended up throwing all of the cookies away and was disappointed. I bought the PB chips, marshmallows, pudding packet and probably wasted $6-7. I won't try this recipe again. Looking forward to making the cake batter pudding cookies though and hoping to have better results!

    Made these today!! I was totally excited but my excitement soon dimished after taking them out of the oven. Followed the instructions step by step (used my kitchen aid mixer). The cookies stayed in the original "ball" form and the marshmellows melted completely out, causing the "cookie" to look hole-y. Total waste of time and money!But the picture is so good to look at! =]

    I made these this afternoon for father's day - they are so yummy! A note to people asking about the size - I doubled the recipe and got 57 cookies. Mine didn't flatten as much as the picture - they look much fluffier but I had no problem with them. They're disappearing as I type :)

    Hello! I have been meaning to try these cookies for awhile now (the picture looks irresistible) and finally got around to it tonight. Something went horribly wrong, because the marshmallow went everywhere over the pan when I tried them. Do you have any tips for how you got yours to stay contained within the cookie as seen in the picture? I really want to master these!

    There were just okay. I was hoping for more chocolate flavour. Next time might try no marshmallows, halve the pb chips and do half chocolate chips.
