Fruit Pizza

I go into surgery in a couple hours to get my gallbladder removed, so today is kind of a busy day to say the least.I thought for today’s recipe I would post one I did as a guest post a little while ago in case you missed it!

We love fruit pizza in this home!

Its both beautiful and delicious!

FRUIT PIZZACookie:

1/2 cup butter, softened
3/4 cup white sugar
1 egg
1-1/4 cups all purpose flour
1 tsp. cream of tartar
1/2 tsp. baking soda
1/4 tsp. salt

Preheat oven to 350 FIn a large bowl, cream together butter and sugar until smooth.  Mix in egg.  Combine the flour, cream of tartar, baking soda, and salt; stir into the combined mixture until just blended.  Press dough into an un-greased pizza pan.Bake at 350 for 8-10 minutes or until lightly browned on top.  Let cool.

For Topping:

12 oz. cream cheese
1/4 cup maraschino cherry juice
1/4 cup pineapple juice
1/4 cup sugar

Blend topping together until smooth.
Spread over cooled cookie and top with your favorite fruits!

Enjoy!

If you want to quicken this recipe up, you can always buy Pillsbury Sugar Cookie Dough and use that instead!  The taste is great and it saves on clean up time!

    Awww, I'm sorry to hear you have to have surgery. From what I hear that can be a rough one to recover from, so I hope you have lots of willing helpers around the house so you can take it easy and relax.

    yum! I'm going to attempt a slightly healthy fruit pizza for my sons birthday cake this sunday. I think I will just your a pie crust for the base and some slightly sweetened cream cheese for the sauce. Yours looks amazing though!!!

    I have been making fruit pizzas for years and they are always devoured. I make mine a bit different...like I use the premade sugar cookie dough and for the "icing" I just mix a little powdered sugar into the cream cheese. Then I pile on the yummie fruit.
