Strawberry Spinach Salad

This salad has been a family favorite for a while!

I love to bring this to parties or eat it as a wonderful lunch or side dish.

It is easy to prepare and the combination of flavors is delicious!

Mix it all together….

and top with this AMAZING dressing!

and you have a perfect, refreshing salad! MMMM!

Here’s whats in it:

 

STRAWBERRY SPINACH SALAD
Baby Spinach Leaves
Strawberries
Shredded Swiss cheese
Red onion (optional.  I omit it because my husband doesn’t really care for them)
Sugar coated pecans

Add the proportions you desire.  When ready to eat, mix together and top with Briana’s Strawberry dressing!

Here is my recipe for SUGAR COATED PECANS:
1 egg white
2-3 cups pecan halves
1 cup sugar
1 tsp Cinnamon (optional)

Preheat oven to 300 F.  In a bowl, beat egg white until foamy.  Add pecans and toss until well coated.  In a separate bowl place sugar and cinnamon if desired and mix together.  Sprinkle over pecans and toss to coat.  Spread in a single layer on a baking sheet and bake at 300 F for 25-30 minutes or until browned, stirring occasionally.  Cool on wax paper.

    I love that dressing! I also love strawberry-spinach salads! They're so summery & satisfying. My favorite is just with a homemade dressing I make a big batch of & keep in the fridge.

    That sounds delicious! I posted a strawberry salad a couple of weeks ago that is similar but with a poppy seed dressing. If you want to cut down on the sugar for the pecans, try browning about 1/2 cup of nuts in a skillet with only 2 Tbsp. of sugar. It just coats the nuts enough to get that nice crunch. Of course, you need to watch them carefully and stir often, but it takes less than 10 minutes.
