Slow Cooker Ham ‘n’ Swiss Chicken

Recently, my mom gave me several Taste of Home cookbooks.  Their recipes are my ABSOLUTE favorite! This recipe came from one of those cookbooks.  To me it tastes like a version of chicken cordon bleu, just with less effort!  Because really, what crock pot meal is not less effort?!

It was easy and delicious!

SLOW COOKER HAM ‘N’ SWISS CHICKEN

2 eggs
2 cups milk, divided
1/2 cup butter, melted
1/2 cup chopped celery
1 tsp finely chopped onion
8 slices bread, cubed
12 thin slices deli ham, rolled up
2 cups shredded Swiss cheese
2 1/2 cups cubed cooked chicken
1 can cream of chicken soup

In a large bowl, beat the eggs and 1-1/2 cups milk.  Add melted butter, celery, and onion.  Stir in bread cubes.In a separate bowl, mix the can of cream of chicken soup and 1/2 cup milk until well blended.
In a 3 qt. slow cooker layer:
half of the bread mixturehalf of sliced rolled-up ham
half of cheese
half of chickenhalf of soup mixture
remaining bread mixture
remaining slices of rolled-up ham
remaining cheeseremaining chicken
remaining soup mixture

Cover and cook on low for 4-5 hours or until a thermometer inserted into bread mixture reads 160 F

Makes 6 servings.

    i have a question, can i half the time and cook this on high? and also could i use raw chicken and just add less liquid? i actually used whole wheat baguette and chicken broth instead of the cream of chicken and added some broccoli we are trying to eat healthier and i notice with alot of my slow cooker recipes they are loaded with cheese or cream soup or things i shouldnt be easting so much!! i can't wait to try this i will let you know how it turns outlisa
