Cinnamon Roll Pancakes

I LOVE Cinnamon Rolls! Every bite is like heaven in my mouth! YUM!

When I saw this recipe, I knew it was one that I had to make. My husband and I LOVED them!

 

CINNAMON ROLL PANCAKES

PANCAKES:

1 cup all-purpose flour
2 teaspoons baking powder
1/2 teaspoon salt
1 cup milk
1 Tablespoon canola oil
1 large egg, lightly beaten

 

CINNAMON FILLING:

1/2 cup butter, melted
3/4 cup brown sugar, packed
1 Tablespoon ground cinnamon

 

CREAM CHEESE GLAZE:

4 Tablespoons butter
2 ounces cream cheese
3/4 cup powdered sugar
1/2 teaspoon vanilla extract

 

Prepare pancake batter: In a medium bowl, whisk together flour, baking powder and salt. Whisk in milk, oil and egg, just until batter is moistened (a few small lumps are fine).

In a medium bowl, mix butter, brown sugar and cinnamon. Scoop the filling into a small zip baggie and set aside. You don’t want this to remain super-liquidy. It’s best if it becomes a consistency similar to toothpaste.

In a medium, microwave-safe bowl- heat butter and cream cheese until melted. Whisk together until smooth; whisk in powdered sugar and vanilla extract; set aside.

Heat large skillet over medium-low heat. Spray with nonstick spray. Scoop about 3/4 cup batter onto the skillet. Snip the corner of your baggie of filling and squeeze a spiral of the filling onto the top of the pancake. When bubbles begin to appear on the surface, flip carefully with a thin spatula, and cook until browned on the underside, 1 to 2 minutes more. Transfer to a baking sheet or platter and keep in a warm oven until ready to serve.

When ready to serve, spoon warmed glaze onto the top of each pancake.

    Saw this recipe last night and couldn't wait until breakfast to make them. I woke up early so that I could get them done before my 6 week old woke up! My husband, 4-year old, and I LOVED these. They were really pretty simple to make and were absolutely delicious. I thought 3/4 c of batter was a little too big...made them a little unmanageable when flipping and only produced 3 pancakes (luckily there were 3 of us eating so it worked out okay...they took up the entire plate!). Next time I'll try 1/2 cup and see if it's a little easier. I also added 1/4 tsp salt to the cinnamon sugar mixture (a trick I use when making my cinnamon rolls that really helps balance the sweet flavor). Thanks so much for this amazing recipe. I'm enjoying looking at all of your other delicious recipes and can"t wait to try more. If they're all as good as this one, you're blog is a goldmine!

    I found that the brown sugar mixture starts burning before the pancake cooks all the way. It also melts all over the pan And burns before I get the next pancake in. I had to wipe it between pancakes until I gave up on it. I just poured both over the pancakes at the end. I liked way the pancakes turned out w/out pouring the brown sugar mixture in. Great texture!

    I was so excited when I saw the recipe this morning because I just love cinnamon rolls. However, after making it, I can say that it turned out to be a big hot mess. The cinnamon filling was way to watery, despite the fact that I tried fixing it by putting more brown sugar, and also by putting it in the fridge for a little while. The glaze was also problematic.. Although I used Tofutti cream cheese because I'm lactose intolerant, I've never had a problem making glaze from it before until now. Following the recipe's directions the glaze turned out to be a buttery watery syrup that was way to sweet and buttery for my liking. I think the measurements on some of this ingredients are wrong. I would rather just make actual cinnamon rolls., or those awesome pumpkin cinnamon rolls that taste heavenly.
