Mississippi Mud Cake
This recipe comes from my grandma’s cook book and I LOVE IT!
The recipe claims to be cake, but I think it taste more like these brownies, with a couple minor differences and just with something a little extra on top :) Some think its pretty rich, but I am a die hard chocolate lover and this is just perfect for me!It combines marshmallow and chocolate to create a little piece of divine heaven.
MISSISSIPPI MUD CAKE
4 eggs
2 cups sugar
1 cup butter, melted
1 1/2 cups flour
1/3 cup unsweetened cocoa
1 tsp. vanilla
1/2 cup chopped pecans (**optional. I never add them because I am not a nut person, but if you like them, go for it!)
7 oz. jar marshmallow creme
FROSTING
1/2 cup butter, melted
1/2 cup unsweetened cocoa
1 tsp. vanilla
6 Tbsp. milk
16 ounces powdered sugar
Grease and flour a 9″ x 13 ” pan. Preheat oven to 350 F.
In a large bowl beat eggs until thick. Gradually beat in sugar. Add melted butter and beat. Add flour, cocoa, vanilla, and pecans (if desired). Stir well with a spoon and pour into prepared pan.
Bake 30 minutes at 350 F or until done. Remove from oven and let cool for a few minutes. While brownies are still warm, spread marshmallow creme gently on surface of cake. Prepare Levee Frosting. Spread frosting gently over warm marshmallow creme, swirling to give a marbled effect Sprinkle nuts over top if desired.

I used to make these all the time when my kids were little. I think I need to make them for my grandchildren...They are rich but oh so good.
