Crock-Pot Chicken Enchiladas

This is a fabulous crock-pot recipe!I love chicken enchiladas, and these tasted delicious!

3 chicken breasts
1 cup water
taco season packet
1 packages flour tortillas (or corn, I am just a big fan of flour tortillas)
1 can cream of chicken soup
1 (4 oz) can chopped green chilies
1 large can green enchilada sauce
1 carton sour cream
1/2 finely chopped onion
2 cups grated cheese

In the morning, place chicken breasts, water and taco seasoning packet in the crock pot and cook on high until chicken is done.  This can be anywhere from 3-5 hours.
Mix up sour cream, green chilies, onion and cream of chicken soup together in a bowl.
Once chicken is done, shred it up and clean out crock pot.
After crock pot is cleaned out begin the following layers in order:
1/2 soup mixture
1/2 of torn tortillas
1/2 of enchilada sauce
1/2 of chicken
1 cup cheese
repeat with the layers with the remaining ingredients
Set your crock pot to low and cook until dinner time!

    Just found your blog the other day through naptimecraftmommy's blog. These are in my crockpot as we speak and I can't wait to taste them. I used a cheesey taco mix with the chicken and it was yummy all by itself. I think this will be a starter chicken for a quite a few chicken recipes.     I made this several nights ago and we all enjoyed it very much! I've been asked to make sure to make this often. It was very easy and convenient, absolutely no trouble at all. Also, I was lazy and didn't clean out the crock pot after cooking the chicken and before layering the ingredients in there but it worked out fine! :P

    My mom made these for our sunday dinner and they were so good. we only had 1/2 carton sour cream so she used 1/2 stick cream cheese and 1/2 carton of sour cream instead of full carton of sour cream. anyway, like i said sooooooooo good. shes way glad i found this recipe for her. btw: we like flour tortillas way better too(: actually we wont even eat corn tortillas... bleh
