Easy Caramel Popcorn

There is something about Caramel Popcorn that just makes people happy. When I was down visiting my mom this past weekend, we cranked out a few batches of this tasty caramel popcorn!

CARAMEL POPCORN

1/2 cup unpopped corn (yields 16 cups popped)
1 cup brown sugar
1/2 cup butter
1/4 tsp salt
1/4 cup light corn syrup
1/2 tsp vanilla
1/4 tsp baking soda

Separate kernels and placed popped corn in a brown paper bag.  

MICROWAVE METHOD In a microwave bowl combine brown sugar, butter, corn syrup, and salt.  Cook on high for 2 1/2 minutes, stir well.  Return to microwave and bring to boil and allow to boil for 2 mintues.  Add baking soda and vanilla.  (It will become foamy)

STOVE-TOP METHOD:Cook brown sugar, butter, corn syrup and salt in a large saucepan for 2 minutes.  Add baking soda and vanilla.  (It will become foamy) Pour into brown paper bag and shake like crazy.  Place in microwave at 70% for 3 minutes, stoping and shaking bag every minute.

    I make this recipe (quite often acually it is SOOOO good) but i just wanted any1 that plans on making this, I have tried the paper bag way & it is VERY sticky & carmel stays in your teeth! So i bought a tin roasting pan i put the popcorn in pan (while your cooking the carmel on stove i keep it warm in oven at 250) warm popcorn is easier to mix with carmel, but after i mix it together i cook at 250 for 1 hour (stir every 20 min) and it is absolutly to die for! just alittle FYI if you like more crunchy carmel popcorn. (oh BTW i do re-use my tin roasting pan b/c i do make this often)

    Love your recipes. I like to find a Caramelized Popcorn with out carinails in them. I wondering if you buy that remade pop corn with no carnials if that would work? But, the cake I had once before and it is so moist and sooo good. Thanks for sharing your recipes.
